DANA CREE is a two-time James Beard Award-nominated pastry chef who worked at Paul Kahan's Blackbird in Chicago. She recently joined 1871 Dairy, a company that is reintroducing dairy production to Chicago, and is expanding her line of gourmet ice creams, "Hello, My Name Is", currently sold at Publican Quality Meats in Chicago.

The perfect book for keen ice cream makers looking for answers to their "why?" question.

This is exactly the book I've been looking for. While it includes some wonderful recipes, it also provides detailed information about the hows and whys of ice cream, including things which aren't usually covered in books for home cooks like stabilizers. The book is approachable, well written, and entertaining. Having eaten some of Dana's creations in the past, I'm looking forward to working my way through the recipes.
